Today was my last full day in China! I thought I would take it easy and have a restful day before traveling... but it was not to be. First I was running around all morning trying to input grades and turn in paperwork (I'm still not done). Then I went downtown with some students to eat hotpot... after which we spent 4 hours shopping. Whoops. I made it back just in time to get paid and then go to the market with other students to get ingredients for dinner.
My student, Lancer, cooked a giant feast for us!
And then afterwards, as we were all saying goodbye, we were all standing around and the students started looking a little emotional, so Betsy said, "It looks like we're about to do trust falls."
So of course, we did.
And then finally I went around and hugged everyone, and they left, making room for Adam and Laurie to come in and say goodbye! WHEW! What a crazy day, but no better way to end my stay in China :)

Spicy Chinese egg noodles recipe
Because I am leaving in two days, one of my closest friends/students here who cooks at my house almost once a week has been trying to teach me all of her Chinese recipes so that I can cook it for my family and friends back home.
The great thing is, they're all REALLY EASY.
Let's take this spicy Chinese egg noodle dish, for example.
Ingredients:
-iceberg lettuce
-thin egg noodles
-soy sauce
-vinegar
-chili oil
-regular oil
-salt
-egg
-green onion to garnish
Step 1: Boil some pieces of lettuce. Put cooked lettuce in a bowl.
Step 2: Boil noodles until soft. Put in bowl on top of lettuce.
Step 3: Add a little of all the rest of the ingredients! You can make it as spicy or salty as you want. It's up to your tastes!
Step 4: Fry an egg and put it on top.
THAT'S IT! YOU'RE DONE! It's so quick and easy that I don't even have pictures for the steps. And it's so delicious! There are no measurements because it's up to you how much you want to put in. I would probably start off with putting more than a teaspoon of each ingredient, tasting it, and then adding more sauces/spices until I like it.
I seriously make this almost every day. Let me know if you want me to cook it for you when I get home! :)

My Greatest Achievement
Goodness gracious! This week has just been full of craziness and fun! I just got back from my freshmen girls' dorm where we had a SPONTANEOUS DANCE PARTY.
You may not realize how big of a deal this is. Maybe I should refer you to this post about my earlier experience in freshmen girls dancing.
Uh huh. Remember that?
Now compare that to this:
Wow! It looks like they actually feel comfortable dancing!
What happened was some of my students complained that they feel like they don't have enough social activities at their school. I explained to them that the only reason why American students have so many social activities is because the students are the ones to initiate, plan, and host all these fun things. In contrast, Chinese students always wait for their teachers to allow them to have a party for a school event. I told them that if they want more social activities, they should just have some parties in their dorms.
So they did!
They invited me to their dorm, and at first we just sat around playing cards, but eventually everyone got pretty tired of sitting down. We all got up to stretch, someone put on music, and the next thing you know, I was jumping around and saying, "THIS IS DANCING! JUST DO IT!" That resulted in this:
Soon they were going crazy. They started calling all their friends to come. Whoever passed by their dorm they would seriously ambush and drag them into our party! Haha! It was crazy!
We probably danced for a good 2 hours. I'm super glad they had fun and actually were active for once! Yay! What an awesome time!
In the end, as the school year draws to a close, I consider getting my students to actually have spontaneous, active fun as my greatest achievement in my year teaching here.

Prom in Guiyang!
Tonight our university had its first prom ever for the English department juniors!
Actually, this was quite a hassle to get approved. The person in charge of all extra curricular activities is the communist party secretary for our department, and she does NOT like the students to really have any fun, especially not western-themed fun. Thankfully, the dean of the English department is super supportive of extra-curricular events, and she was able to approve the prom by saying that it is an academic event. The only downside is that we have to have it in the classroom on a weekday, but whatever!
Not gonna lie, for the first like two hours, it was pretty awkward. No one would dance. They all just kinda stood around the perimeter of the room eating snacks. It was worse than junior high.
But finally after they realized that if they weren't going to dance, it was going to be very boring, they all got out on the dance floor and just went crazy. And I think they had a lot of fun!
The students elected a popular boyfriend/girlfriend couple as their prom king and queen! I made them dance to All My Life.
And that was it! What a great night!

Goodbye Muffin: A Photo Montage
Just a few moments ago, Muffin was picked up and taken off to his new home! To say goodbye, I have created this photo montage of Muffin throughout his stay in my care. So far, it has been met with outstanding reviews!

A Tale of Two Kitties
Well the time has finally come. Someone has offered to take guardianship of Muffin. Muffin is scheduled to be taken away this Saturday, and in honor of that event, I decided it was high time I record the tale of Tibby.
Some time last semester, Betsy inherited a cat from another foreign teacher at this school who left to go back to his home country. This cat's name was Tibby. The first night Tibby stayed with Betsy, he went buck wild, screeching and throwing himself at the walls. Betsy couldn't take it anymore and let him loose outside.
Unfortunately, that was not the last we saw of Tibby. Tibby refused to come back into the apartment, but he would routinely lurk outside my window and meow, which resulted in this:
And that is what Muffin sounded like on a good day. Usually he would literally wail. Now imagine that going on incessantly until Tibby ran away. It was awful.
Well, luckily one day Betsy came home and saw Tibby right outside her door! She let him inside, and he made himself at home. Eventually, she found a student willing to take Tibby and all was well.
Or so we thought.
Not long after giving Tibby away, Betsy came home, looking slightly disturbed, and said, "I think that Tibby was a fake."
Betsy had just seen another cat outside our apartments that looked strikingly like Tibby. The next day I also looked out my window and saw this:
It seems that Betsy had let in, taken care of, and given away an impostor Tibby!
Of course, that left me with more cat screeching until we moved apartments last April.
Moral of the story: Sometimes stray cats pretend to be evil house cats in order to get a nice home.

Muffin strikes again
Woke up this morning and walked into the bathroom to find this:
"What is that?" you ask? Why, it is Muffin, with half his body in my toilet bowl, drinking water. The fool's not even trying to stay dry.
You can only wonder what he'll come up with next...

Things I Took for Granted: Pets that Don't Poop in your Shoes
Yes, you read that right. Pets that don't poop in your shoes.
I got home one day from class to find that Muffin had left me a little present in my Toms. And the present was poop.
As you might suspect, I was infuriated. The really maddening part is that this was clearly a DELIBERATE and INTENTIONAL attack against me. Betsy and I live together now, and so we have twice as many shoes lying out by our doorstep. Of course, Muffin chooses my shoes.
Now, Betsy also has much larger feet than me. Do you know what size shoes my Toms were? A five. Toms size five. Do you know how SMALL the opening is to a Toms size 5 shoe?? It's probably smaller than the size of an iphone. Now imagine trying to aim your POOP to go into that opening.
This. Was. No. Accident.
And if that's not enough to convince you of Muffin's evil intentions, a week later he pooped on my fake Ugg boots.
Muffin, this is war!

ESL Conversation Starters
One thing that has been really helpful for me as a teacher in China has been sharing ideas and lesson plans with other teachers. I don't know if I will continue to be a teacher for the long term, but I figured that whatever experience I did gain in this one year could still be helpful for others! I've decided that whenever I come across an idea that really works well with my students, I'll share it on here!
For starters, our school's English corner last Monday went really well. Every week Betsy meets with the student leaders to help them come up with discussion questions. This week the students wanted the topic to be "Your Life Story." Of course, many students who come to English corner are from other departments at the university, and their English is usually not so great, so we needed something to help them get started talking.
I suggested doing a happiness line graph. This idea was actually based on a reflective activity that we did at a couple ICF leadership meetings (many of my ideas actually are derived from InterVarsity leadership experience... go figure). The x-axis of the graph is time in years starting from when you were born until the present. The y-axis is a scale of how happy you were. So if you were really happy at a certain point in your life, you should draw your line going higher at that point on the graph. It makes more sense if you look at the picture.
This worked surprisingly well! I thought maybe the idea would confuse students, but in the end, having a visual really helped them to talk about their experiences growing up, both the good and the bad. It was a great time of conversation!
This idea can also be used for any conversation group; not just English learners!
Hope this is helpful! Have fun conversing! :)

My Favorite Things: Shanghai
For almost all of February, I was traveling around Asia visiting different friends and exploring different cities. I figured that blogging about every detail of my whole month would probably take another whole month or more, so I decided to just share a few highlights from each place.
So here is the first installment of my new blog post series: My Favorite Things! Today's post topic - Shanghai!
Of course my number one favorite thing has to be seeing my boyfriend after 6 months :)
But in terms of touristy things and seeing the city, here are a couple things I really liked:
1. Souvenir shopping around the Yu Yuan Garden and Temple of the Town God.
There are tons of shops all selling very Chinese style souvenirs.
I bought this teapot (and matching teacups)!
Richard, with his Chinese bargaining skills, also helped me buy some tea at one of the many tea shops to give away to friends! And he bought some pretty paintings on scrolls that I don't have pictures of to give to his boss.
One word of warning, though, I thought the food sold around the little shops there was just okay. But maybe that's just due to my American taste buds. Next time, I would rather spend more money and eat at Din Tai Feng :P
2. The Shanghai Ocean Aquarium!
I just think aquariums are cool, and this one has the longest underwater tunnel in the world (at least that's what I heard). Here are some pictures from inside the tunnel.
The aquarium is also a short walk away from the Jinmao Observation Tower... which, okay, wasn't the most exciting thing in the world. Observation towers are nice, and I like getting to see the whole city, but now that I've done it once, I don't need to do it again for a while, especially at a price of 100 RMB a person, which I think is pretty expensive for China.
At least I can say I've been once, though!
Overall, I really enjoyed Shanghai. There's good food and some fun things to see. I don't know if it would keep me entertained for more than 4 days, and you have to be okay with crowds (this is China), but I would definitely like to go back someday :)
Korea blog post coming soon!

Things My Students Say: Chinese and Smoking
It's the start of a new semester! I feel like some of my students may not respect my authority..
Me: Here are the class rules - DON'T SPEAK CHINESE!
Students: Hao, hao!
Me: ... I hate you guys.
Or maybe it's just a lack of social skills..
Betsy: Mark, have you smoked any cigarettes lately?
Mark (exhaling into Betsy's face): HAAAAAAAAAAAA!
Me: ... Could've just said no...
Welcome back.

Things I Say To My Students
So I have this one student named Min Yu, and some of the other students and I were making fun of him one day...
MinYu: Hey! I am not a mean man!
Me: Oh but you are... a MIN MAN!

The Prodigal Cat: Epilogue
Ever since Muffin came home, he spends his days sitting right in front of my little space heater...
And when I turn it off to leave the house, this is what I find when I get back:
I think I know one cat who is never leaving a heated room again..

The Prodigal Cat: A Christmas Miracle
If you have been keeping up with my blog, you probably remember that I am currently in possession of a certain cat named Muffin.
Muffin is generally not too much of a nuisance. He stays inside and sleeps for most of the day. At night he likes to snuggle up next to me for warmth, although that sometimes leads to me waking up with a cat butt in my face the next morning. It's true that Muffin has weekly vomiting episodes and every now and then will wake me up at 4 in the morning because he is screaming at a stray cat outside the apartment, but even Betsy has admitted that she grew a little soft spot for Muffin.
So when Muffin ran away last Tuesday evening and didn't come back, we were both shocked.
What happened was this: I had some students over for dinner, and Muffin was actually having a lot of fun jumping into their laps and being pet. For some unknown reason, however, when they opened the door to leave, Muffin dashed outside, ran down the stairs, paused for one moment to look back at me and meow a goodbye, and disappeared into the night. I ran down the stairs after him, but by the time I got to the bottom, Muffin was nowhere to be found.
Now let's remember, it is 32 degrees outside at night here, so it's literally freezing. Muffin has never lived outside before. In addition, Muffin is at least like 10 years old. He can't even catch mice. There is just no freaking way Muffin can survive out on the streets of Guiyang, so Betsy and I both assumed that Muffin would come crawling back home later in the night.
Well, the whole night passed, and then a whole day, and then another three nights and three days, and still no sign of Muffin. We had all pretty much lost hope.
This brings us to Saturday night. I'm in the kitchen putting some tortilla chips on my plate to make some nachos. Wendi, our teammate who was sleeping over at my place that night, was to my right, grabbing herself a plate. Betsy is walking into the kitchen when she asks, "Hey, should we have a memorial service for Muffin?"
We decide to throw a little service for Muffin at some undetermined time in the future and settle down for our girls' night. Three plates of nachos, one bag of popcorn, 12 cookies, many cups of soda, and one Twilight movie later, I am bringing the dirty dishes back to the kitchen when I hear a soft "meow meow meow" at my front door.
Shocked, I turn and give an "it can't be possible" look towards Betsy before I rush to the door. I crack the door open and in slinks in Muffin!
The excitement and the joyous cries of "Oh Muffin! You're back! Where have you been?" lasted for about one minute until we realized how utterly filthy this cat was.
Given that Muffin loves to climb onto beds, blankets, and people, and given that Muffin will cry all night if not given a warm place to sleep, we knew that we had to do something to clean this cat.
So where did you find Betsy and me yesterday night at midnight? Why, looking up "how to give a cat a bath" on Google, of course!
Luckily, Wendi was here to help document the whole thing.
Here are Betsy, me, and Muffin before the cat shower. I tried to waterproof myself as best as possible. Muffin was suspicious.
Betsy and I brought Muffin into the bathroom and locked the door. It was my job to hold Muffin down while Betsy washed him. The website said to use cat shampoo, but we didn't have that, so we used my Pantene Pro V. Muffin was unhappy.
The finished product: an extremely ugly, extremely unhappy, semi-clean cat.
Of course, I did not escape without some battle scars. Thank goodness Betsy had Neosporin and Band-aids.
Moral of the story? Don't own a cat.

Jump On It!
I thought that as a teacher, I would utilize all the knowledge I learned from all the research I studied in my linguistics and education classes in college. Instead, I find myself utilizing skills from every area of my life BUT my classes.
Case in point: I have somehow become the adviser for our department's dance club. I thought I would just have to oversee it and let the student leaders do their thing.
Nope.
I find that not only do I have to learn the dances, I also have to teach them!
So of course, I started off simple. I thought teaching them the Jump On It dance, as seen in the Fresh Prince of Bel Air, would be a good introduction to dance and to western culture...
Looks like we've got a long ways to go...

Things My Students Say: Name Change
Hope: Teacher, I want to change my English name.
Me: Okay, what do you want to change it to?
Hope: I wanted a meaningful name, so I want to be Shell. Because I like seashells very much. They are so strong.

More Hotpot!
Last weekend Vicky and Christina came over to cook some delicious hotpot with me! It was just clear soup with veggies, tofu, pork, and mushrooms, but it was so yummy!
First, Vicky used the fat from the pork to make some oil.
She put it in the pot, added water and salt, and there was our soup broth! After that we just dumped in tofu, meatballs, pork slices, and mushrooms, brought it to a boil, and it was ready to eat!
So easy and so delicious! Of course, the best part was the dipping sauce of ground dried chili peppers and green onions. Yum! So spicy and flavorful! I don't think I can eat hotpot without it anymore.

English Dept. Basketball Tournament
Yesterday was a pretty busy day with the Halloween party, but it was made even more busy by the basketball tournament being held by the English department. It turns out that the team from one of my junior classes made it all the way to the final game against a senior team. Unfortunately, their final game was during our class.
The class, however, was able to persuade me to reschedule our whole class to today at noon after much negotiating. (And by that I mean one of the students on the team came up to me and said, "Can we reschedule our class to tomorrow so we can all go to the game?" and I said "Yeah, sure.")
So of course I took this opportunity to introduce some American sports culture to the class.
When we got to the basketball court, I was surprised to find a very formal looking seat for myself and the other foreign teachers.
Not that this stopped me from cheering and yelling the whole game. I think all the Chinese students and teachers were shocked at how loud Betsy and I could get.. But this only encouraged my class to cheer louder! Luckily, the dean thought it was hilarious and asked me how I got my class of juniors to act like they were freshmen again.
After a close game, my class's team came back from behind to win the championship!
It was nice to see my class get excited about something. If only they would get excited about English too...
